To prepare chicken fillet strips, first, season the chicken fillets. Chop the onions and mix them with the spices, then add them to the chicken. Let the fillets marinate in the refrigerator for a few hours. Then, prepare the special flour and coat the chicken in it, followed by dipping them in ice water. Finally, fry the fillets in hot oil and serve with your favorite sauce.

Ingredients:

  • Chicken fillets: 8 pieces
  • Onions: 2
  • Water: 1/2 cup
  • Bread crumbs (Hame Aashena bread crumbs): 2 cups
  • Black pepper: 1 teaspoon
  • Paprika: 1 teaspoon
  • White pepper: 1 teaspoon
  • Salt: 1 teaspoon
  • Ginger powder: 1/2 teaspoon
  • Garlic powder: 1 teaspoon
  • Frying oil: as needed

Step 1: Preparing the Chicken Fillets

You can either cut the chicken fillets or leave them whole if they are not too large. Start by seasoning the chicken fillets. Slice the onions into rings or coarse strips.

Step 2: Adding Spices to the Onions

Place the onions in a large bowl. Add 1/2 cup of lukewarm water, 1/2 teaspoon of black pepper, 1/2 teaspoon of white pepper, 1/2 teaspoon of garlic powder, 1/2 teaspoon of paprika, and 1/2 teaspoon of salt to the bowl with the onions.

Step 3: Adding Saffron and Mixing Ingredients

At this stage, you can also add a little brewed saffron to the marinade if desired. Mix the ingredients in the bowl well with your hands until even, then add the chicken fillets and mix well.

Step 4: Marinating the Chicken Fillets

After mixing the ingredients well, cover the bowl with plastic wrap and refrigerate for at least 4 hours to let the chicken fillets absorb the flavors (for best results, marinate the chicken overnight).

Step 5: Preparing the Special Flour for Strips

Now prepare the special flour (Hame Aashena bread crumbs) for the strips. Mix the flour (Hame Aashena bread crumbs) with ginger powder, the remaining black pepper, salt, white pepper, garlic powder, and paprika until well blended, then place it in a large bowl and keep it handy.

Step 6: Preparing the Fillets for Frying

After the fillets have marinated, take them out of the fridge, and keep a bowl of ice water handy. Heat a deep skillet and add enough oil so the fillets can float in the oil.

Step 7: Heating the Oil

Place the skillet over medium-high heat until the oil is fully hot. Then coat the fillets in the flour, dip them in ice water, and repeat this process three to four times until the fillet surface becomes flaky.

Step 8: Frying the Fillets and Serving

Now place the fillets in hot oil to fry. Wait until they turn golden, then remove from the oil and place on a paper towel or metal rack to drain excess oil. Serve the fried fillets with fries and your favorite sauce.
